The Future Ready Food Safety Hub (FRESH) serves as Singapore's lead scientific platform under the Singapore Food Story R&
D Programme, to bring together researchers, regulators and industry to build up Singapore's food safety science and R&
D capabilities to secureSingapore's food supply and economic value proposition. FRESH will embark on R&
D and talent developmentactivities to help enhance Singapore's local food regulatory capabilities and allow "

food products to be safely launched in Singapore, as well as help promote Singapore-developed food standards internationally. FRESH is part of the Singapore Food Story R&
D Programme (SFS), with partner organisations being the Singapore Food Agency (SFA), A*STAR and the Nanyang Technological University (NTU).
The Principal Research Fellow, Cultivated Meat, will support FRESH research into food safety science and innovations in cultivated meat (including seafood). The position is suited to someone looking for innovative research activity who is experienced in tissue culture, stem cell biology, composition analysis and identification of risk factors. The role will be working closely with the FRESH Director to develop cultivated meat related food safety risk assessment and comparative studies.
Key Responsibilities:

  • Develop cultivated meat set up (cell lines and culture medium)
  • Evaluate nutrition, allergenic potential, bioaccumulation, and xenosialitis risks in cultivated meat cell lines.
  • Handle planning and execution of experiment
  • Monitor research progress
  • Manage lab environment including tracking purchases
  • Communicate research activities within the FRESH, FST and NTU food community
  • Take charge of development on shared lab SOPs and workflows


Job Requirements:

  • PhD in a relevant discipline such as molecular biology, food science and technology, or bioengineering.
  • Candidates with experience in cell culture, tissue engineering, and/or -omics analytical platforms will be advantageous.
  • Understanding of physiologically-based pharmacokinetic-pharmacodynamic (PBPK-PD) model structure will be another advantage.
  • Direct experience working in a food lab.
  • Strong background in food related research
  • Comfortable with a role that crosses academic, industry and regulatory thinking
